No Bake Cookie Bites
I am always looking for healthy snack bars to give my kids (and myself) that are good for you AND taste great. They are not so easy to find. I decided to mix together a combination of healthy ingredients and make my own little energy-boosting bites. These delicious no-bake cookie bites are so easy to throw together, versatile and chock full of nutrients. Today I decided to make them with homemade almond butter, toasted coconut, rolled oats, ground flaxseed, dark chocolate chips, chia seeds, honey and vanilla.
Feel free to mix up the flavors. You can use any type of nut butter, agave or pure maple syrup instead of the honey, raisins, nuts, chopped up whole grain pretzels, etc. The flavor combinations are endless.
Simply mix your ingredients together in a large bowl until well combined. Then place in the refrigerator for about an hour to chill.
Use a small spoon or scoop to make 1-inch balls. I found it easiest to use a mini scoop and to keep my hands clean and a bit damp to help form them into little uniform cookie bites.
Keep them chilled the refrigerator for up to a week in an air-tight container. These make delicious pre-workout energy boost, post-workout recovery snack or after dinner treats. The entire family will love them and you can feel good about serving them!
No-Bake Cookie Bites
1 cup rolled oats
2/3 cup toasted coconut flakes
1/2 cup ground flaxseed
1/2 cup chocolate chips (dark, milk or white chocolate chips, or raisins)
1 Tablespoon chia seeds
1/4 cup honey (or maple syrup
1 cup nut butter (choose a runny nut butter for easier mixing - I like Trader Joes and 365 Whole Foods Market)
1 teaspoon vanilla extract
Place the oats through the chia seeds in a large bowl and mix. Add in the honey, nut butter and vanilla and mix until thoroughly combined. Cover and let chill in the refrigerator for about 15 minutes.
Once chilled, roll into evenly sized balls…mine were about 1-inch in diameter. Store in an airtight container in the refrigerator for up to one week.
Makes about 34 1-inch balls.
