Ben's Chili

I am always looking for new one pot recipes that my entire family will eat…it makes for a much more relaxing and enjoyable meal time!  A few weeks ago we were at my sister’s apartment; her husband is always cooking up something delicious.  He’s great at throwing all kinds of things together and coming up with an amazing meal.  This time is was a new chili recipe.    I love that he used a combination of different beans (never thought to put chickpeas in my chili) as well as apple cider vinegar AND cinnamon.  This is my attempt at recreating his chili….and I think I did a pretty good job!  Hope you enjoy it.

Ben’s Chili

1 pound organic ground beef

4 cloves chopped garlic

1 Tablespoon cumin

1 Tablespoon chili powder

1 teaspoon cinnamon

6 oz tomato paste

3 T apple cider vinegar

15 oz can black eyed peas, drained

15 oz can chickpeas, drained

15 oz can kidney beans with liquid

8 oz chicken broth

few shakes of garlic powder

 

Sauté the beef over medium high heat until brown.  Add in the chopped garlic and continue to sauté for another 2 minutes.  Add in the rest of the ingredients and simmer uncovered for 1 hour.  SO SIMPLE!
