Fish Tacos
I love fish tacos. They are full of flavor, fun to put together and super healthy! This dish is super easy and tastes great with a dollop of Greek yogurt, a little homemade guacamole and cucumber-cilantro salad with halved cherry tomatoes. I like to make extra fish so I can enjoy the leftovers over my salad the next day for lunch!
Fish Tacos
1 cup cilantro
2 teaspoons paprika
1 teaspoon cumin
½ small red chili (seeded)
2 teaspoons olive oil
juice of one lime
zest of one lime
pinch of salt
1 ½ pounds snapper filet (or any firm white fish) cut into 1-2 inch wide strips
Blend together cilantro, paprika, cumin, red chili, olive oil, limejuice, zest and salt into a paste. Pour over snapper and marinate for 15 minutes.
Heat grill or a non-stick pan over medium-high heat and cook the fish for 3-4 minutes per side, until cooked through.
Serve in a warm corn tortilla with butter lettuce, a dollop of Greek yogurt (or coconut yogurt), a little homemade guacamole and cucumber-cilantro salad with halved cherry tomatoes…YUM!
