Fresh Vegetable Quinoa Salad

Did you know that quinoa is actually a seed and NOT a grain?!? It’s delicious (tastes a bit nutty), nutritious (provides all 9 amino acids) and SO simple to make (cooks in less than 15 minutes!). This is one of my favorite quinoa salads and it only takes minutes to make!

Fresh Vegetable Quinoa Salad

  • 1/2 Cup uncooked quinoa

  • 1 cup diced heirloom tomatoes

  • 1 cup diced seedless cucumbers

  • the juice of 1 lemon

  • 1 ounce of feta cheese, crumbled

  • salt and pepper to taste

Rinse and drain the quinoa well. Place the quinoa in a small saucepan along with 1 cup of water. Bring to a boil and then simmer, covered until all of the water is absorbed, about 12 to 14 minutes; set aside and allow to cool.
Toss together the tomatoes, cucumbers and lemon juice. Add the quinoa and feta cheese and season with salt and pepper.
