Balsamic Roasted Onions

Onions are rich in flavor and full of nutritional value. They are high in antioxidants, including quercetin, which acts as a natural antihistamine and anti-inflammatory, flavonols, which bolster cellular antioxidant activity, and diallyl sulfide, a compound that may promote heart health and healthy immunity. Roasting them brings out their natural sweetness and makes a delicious side dish to any meal!

Balsamic Roasted Onions

  • 3 yellow onions

  • 2 Tablespoons balsamic vinegar

  • 1 teaspoon dijon mustard

  • 1 teaspoon minced garlic

  • 1/2 tablespoon minced fresh thyme leaves

  • 3/4 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

  • 1 Tablespoon olive oil

Preheat the oven to 400 degrees F.
Whisk together balsamic vinegar, mustard, garlic, thyme, salt, and pepper and olive oil in a large bowl. Peel onions and cut into wedges, place in bowl and toss to coat. With a slotted spoon, transfer the onions to a baking pan and roast for 30 to 45 minutes, until tender and browned. Toss the onions once during cooking. Remove from the oven, and drizzle with the reserved dressing.
