Watermelon, Feta and Quinoa Salad
Summer is a time for swimming in the pool, relaxing outside with friends and hosting barbecues. It’s also a great time to add delicious fresh fruit and herbs into your salads. This quinoa salads is one of my favorites. It’s light, refreshing and so simple to throw together. Today I used watermelon and cilantro, but you could really use any fruit or fresh herb. Think peaches and basil, strawberries and mint, pineapple and parsley…the combinations are endless! Enjoy!
Watermelon, Feta and Quinoa Salad
1 1/2 cups quinoa, rinsed
juice of 2 limes
1 Tablespoon avocado oil
1/2 cup loosely packed cilantro leaves (you could also use mint)
1 cup diced watermelon
1/2 large English cucumber, diced
3/4 cup feta cheese, crumbled
Salt and pepper to taste
Cook quinoa according to the package. Set aside in a large bowl and allow to cool completely. Place the lime juice, oil and cilantro in a blender/food processor and process until finely chopped and well blended. Combine the cooked quinoa with the watermelon, cucumber, feta and dressing. Toss well and season with salt and pepper.
