Cauliflower Everything “Rolls”

I love cauliflower. It is healthy, delicious and so versatile.  You can eat it raw, roast it, turn it into “rice”, pizza crust and even “rolls”! I have to admit these do not really taste like bread rolls, but they are delicious, filling and full of great flavor. To make them simply mix together raw, riced cauliflower (you can make this buy grating your cauliflower with a box grater or in a food processor or by buying a container of pre-riced cauliflower!), almond meal, coconut flour, corn meal and eggs and forming into 1/2 cup little mounds. Top with some everything bagel topping (check with your local bagel store, they probably sell it all made for you!) and then bake in the oven…delish!

Cauliflower Everything “Rolls”

1 head cauliflower, riced (about 3 cups)

2 tablespoon almond flour

1 tablespoon coconut flour

1 tablespoon organic corn meal

2 organic eggs

1/4 teaspoon Himalayan sea salt

1/4 cup everything bagel topping (you can purchase this from most bagel shops)

Preheat oven to 400 degrees and line a baking dish with parchment paper.

 

In a food processor, or using a box grater, pulse/grate cauliflower until rice consistency (or you can purchase pre-riced cauliflower from Whole Foods)

 

In a medium bowl combine eggs, cauliflower rice, almond flour, coconut flour, corn meal, and salt. Scoop out the cauliflower mixture using a 1/2 cup measuring cup and place on the lined baking sheet. Sprinkle them generously with everything topping.

Bake for 20-25 minutes until cooked through and slightly browned on top.

**You can make everything bagel topping by combining:

1/2 teaspoon poppy seeds, 1 tablespoon sesame seeds, 1 teaspoon dried minced garlic, 1 tablespoon dried minced onion and 1/2 teaspoon Himalayan sea salt
