Simply Delicious Chicken Soup
I love chicken soup. It’s comforting, filling and a great way to get my kids to eat more protein and vegetables. Unfortunately I do not always have a enough time to make it entirely from scratch. This simple recipes uses a few short cuts (like store bought chicken stock and a rotisserie chicken) to create a delicious soup with lots of veggies that tastes like it was simmering for hours. Using fresh ginger adds amazing flavor and the fresh lemon juice brightens up all of the flavors. A fun addition is the spiralized sweet potato (I LOVE my spiralizer!). Nothing better than turning a vegetable into a noodle! Best part…the entire family LOVED it and asked for more.
Simply Delicious Chicken Soup
1 teaspoon avocado oil
½ medium yellow onion, minced
2 large garlic cloves, minced
4 medium stalks celery, thinly sliced
2 medium carrot, sliced
1 inch fresh ginger root, minced
8 cups low sodium organic chicken stock
1 tablespoon fresh flat leaf parsley, chopped
1 teaspoon fresh thyme leaves
pinch of sea salt
2 cups cooked chicken breast meat, shredded (I used an organic roasted chicken from Whole Foods)
1 teaspoon fresh lemon juice
1 small sweet potato spiralized (optional)
Heat oil in a large stock pot over medium heat. Add the onions and sauté for 3-4 minutes. Add the garlic and sauté for another 3 minutes. Add the celery, carrots and ginger and sauté for 3-4 minutes. Add the stock, herbs and sea salt and bring to a boil. Turn the heat to medium-low and simmer 20 minutes. Add the chicken and simmer another 15 minutes. Add the lemon juice and spiralized sweet potatoes and cook another 10-15 minutes. ENJOY!
