Roasted Corn and Black Bean Guacamole
I LOVE guacamole. The combination of creamy avocado, lime juice and fresh cilantro is heavenly. I love spreading it on grainy bread or dipping into with a variety of veggies. This twist on the traditional adds black beans, roasted corn and farm fresh tomatoes turning traditional guacamole into an incredible flavor experience…can you say YUM!!! It’s so simple to make, full of delicious flavors and a must make this summer!
Roasted Corn and Black Bean Guacamole
2 Avocados pitted and cubed
2 tomatoes seeded and chopped
2 ears of farm fresh corn roasted, kernels cut off the cob
1 cup black beans (I used organic, canned black beans) rinsed and drained
juice of 1 lime
large handful of cilantro roughly chopped
pinch of kosher salt
In a large bowl, combine the avocado, tomatoes, black beans and corn. Add in the lime juice, Kosher salt, cilantro and toss to blend. Serve at room temperature.
