Brownies (with a healthy twist)

I know what you are thinking, how can brownies be healthy AND delicious at the same time?? They contain a secret ingredient that you would never expect to find in a brownie, but it somehow works beautifully! I promise you this recipe will not disappoint! How amazing do these look??

They are fudge, chocolaty and a little bit coconutty! AND they are good for you! So what’s the secret ingredient…black beans! I know, sounds crazy but they are seriously amazing. Just don’t tell the kids!

 

Brownies (with a healthy twist)

Two 13.4 oz boxes of organic black beans (drained and rinsed very well)

4 tablespoons cocoa powder

1 cup oats (Quick oats or rolled oats but NOT steel cut oats)

1/4 teaspoon salt

1/2 cup honey

1/2 cup coconut oil

1 Tablespoon pure vanilla extract

1 tsp baking powder

1 cup chocolate chips (plus some extra for sprinkling on top)

 

Preheat oven to 350 F.

Grease an 8×8 pan and line the bottom with parchment paper.

Combine all ingredients except for the chocolate chips in a food processor and blend until smooth. Add in the chocolate chips and stir.  Pour the batter into the pan and sprinkle some extra chocolate chips on top. Bake for 15 minutes, let cool for 10 minutes before cutting into 24 small squares.

You can store them in the refrigerator; just pop them in the microwave for about 5 seconds before serving for super fudgy brownies!
