Chocolate Peanut Butter No-Bake Bars

I love eating fruits and vegetables and grilled fish, but every once in awhile a NEED some chocolate. Recently my friend and fellow nutritionist Lauren Kelly posted a recipe for Salted Caramel Dark Chocolate Bars that looked AMAZING!! I was about to make them, when I realized that I did not have half of the ingredients. UGH!! What was a girl to do…come up with her own version of this magnificent looking creations. So I give you my Chocolate Peanut Butter No-Bake Bars.

They are SO simple to make and oh so good!  Just watch your portions. While they ARE chock full of healthy ingredients (flax seed, dark chocolate, natural peanut butter, honey…), they do have calories. So make sure to cut them into little squares, make yourself a big mug of tea, sit down, relax and enjoy these little bites of heaven!

 

Chocolate Peanut Butter No-Bake Bars

1 cup almond flour

1/2 cup flax meal or ground flax

4 tablespoons dark cocoa powder

4 tablespoons honey

2 teaspoon coconut oil, melted

1/2 cup smooth peanut butter

5 ounces good organic dark chocolate bar broken into pieces

 

Line the bottom of an 8×8 inch baking pan with parchment paper.

In a medium bowl, mix the almond flour, flax meal, cocoa powder, honey and coconut oil. Press the mixture into the bottom of the pan and place in the refrigerator to chill.

Place the peanut butter in small glass bowl and microwave and heat for 45 seconds. Pour over the chocolate crust then place the pan back in the refrigerator.

In a separate glass bowl, melt chocolate in the microwave for about 60 seconds, until smooth. Pour on top of the peanut butter and carefully spread it out to evenly cover the surface. Place the pan back into the refrigerator to harden.

Using a sharp knife, cut the bars into 16 2”x2” squares. Store in an airtight container.
