Carrot Soup

This cold, rainy day put me in a soup making mood. All this week I will share some of my favorite warm and cozy soup recipes. Tonight we made carrot soup. This delicious recipe (from 101cookbooks.com) is all about keeping it simple. This soup was so easy to make and SO good to eat.

Carrot Soup

  • 2 tsp olive oil

  • 2 medium cloves garlic, minced

  • 1 large yellow onion, chopped

  • 1 1/4 pounds carrots – cut off the tops, scrub well and dice into 1 inch pieces

  • 3 C vegetable stock

  • juice of 1/2 a lemon

  • fine grain sea salt to taste

Heat oil in heavy soup pot over medium heat. Add the garlic and onions and sauté for about 3-4 minutes. Add the carrots and stock and bring to a boil. Turn down the heat and simmer for 30 minutes, until the carrots are tender. Remove from the heat and let cool. Puree in the blender (or with a hand blender) then add lemon juice and salt to taste.
