Roasted Brussels Sprouts…with a twist!
Brussels sprouts are one of my favorite vegetables. Not only are they are low in calories, high in fiber and loaded with vitamins and minerals, they are also delicious…especially when roasted! Try drizzling the roasted sprouts with a combination of olive oil, balsamic and lemon zest…AMAZING!
Roasted Brussels Sprouts…with a twist!
2 pounds of Brussels Sprouts (ends trimmed and then cut in half)
2-3 teaspoons of olive oil
1 teaspoon Kosher salt
2 tablespoons of balsamic vinegar
zest of one lemonToss Brussels sprouts with 1-2 teaspoons of olive oil and Kosher. Roast them on a sheet pan for 35 to 40 minutes at 425, until crisp on the outside and tender on the inside, shaking the pan occasionally.
Whisk together 1 teaspoon olive oil, balsamic vinegar and lemon zest. Drizzle over hot, roasted sprouts and enjoy!!
