When life gives you lemons…part 1
This past weekend one of my wonderful next door neighbor dropped off a beautiful Persian lemon from his tree. He told me that he and and his wife always enjoy all of my recipes and he wanted to see what I would create with it. It was one of the most gorgeous lemons I have ever seen (it was so large that at first I actually thought it was a grapefruit!) and SO fragrant. I was so flattered that he brought me such an amazing piece of fruit, I knew I had to create something delicious.
I actually ended up creating three delicious things from this one amazing lemon. Here are the first two dishes. We started the meal with a delicious salad…
Baby Arugula with Parmesan, Lemon & Olive Oil
1 large bunch of baby arugula
2 tablespoons fresh Persian lemon juice
2 teaspoons extra virgin olive oil
pinch of Kosher salt
pinch of fresh black pepper
hunk of good parmesan cheese
In a large salad bowl, combine lemon juice, extra virgin olive oil, salt and pepper. Add the arugula and toss well. Top with sheets of shaved parmesan (use a vegetable peeler for best results).
And then used a bit more of the fresh squeezed juice to make a marinade for the halibut…
Lemon, Rosemary Halibut
2 6-ounce wild halibut filets
2 tablespoons of olive oil
2 tablespoons of white wine
2 tablespoons of lemon juice
1 tablespoon of chopped rosemary
Mix together, olive oil, wine, lemon juice and rosemary in a shallow dish – place the fish in the dish and marinate for 30 minutes or up to 1 hour (turning mid-way).
Heat up a outdoor grill or a grill pan to high heat, grill fish for 4-5 minutes on each side.
