Crock-Pot Balsamic Chicken

I love the idea of a crock-pot meal. Put everything into one pot in the morning and come home to wonderfully smelling kitchen and a delicious slow cooked meal. The problem is I’ve been trying out a lot of different recipes and have not found many that I love…until now. This dish has been a hit with the ENTIRE family. My kids have been asking for MORE chicken and my 6 year old son just told me this was his favorite dinner. Woo hoo! This is easy to make, delicious, healthy and now a regular in the dinner rotation.

Add skinless, boneless chicken breasts to a crock-pot and top with thinly sliced red onions, oregano, thyme, basil, salt, pepper and whole garlic cloves.

Top with crushed tomatoes and balsamic and cook on high for 4 hours.

Crock-Pot Balsamic Chicken

  • 6 boneless, skinless chicken breasts

  • 1 teaspoon olive oil

  • kosher salt

  • fresh ground black pepper

  • 1 small red onion thinly sliced

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • ½ teaspoon dried thyme

  • 4 whole, peeled garlic cloves

  • 26 oz box diced tomatoes

  • ½ cup balsamic vinegar

 

Drizzle the olive oil on the bottom of the crock-pot. Add the chicken breasts and sprinkle with salt and pepper (flip over and sprinkle both sides). Top with sliced onion, dried herbs and garlic cloves. Add in the tomatoes and balsamic vinegar. Cover and cook on high for 4 hours.

This is delicious served over a whole grain (quinoa, faro, whole wheat couscous) or over zucchini noodles.  ENOJOY!
