Crockpot Chicken Tacos
My children have declared Tuesdays “Taco Tuesday” for this school year. I’m happy to give them tacos every week; it helps take the stress out of meal planning. I don’t want them to get sick of tacos, so my plan is to mix it up a bit and serve different kids of taco (almost) every week! This week we tried Crock Pot Chicken Tacos. Every time I make chicken breasts in the crock pot they could out shredded…perfect for tacos. These are so easy, so delicious and so healthy! Simply cook the chicken in a crockpot with beans and salsa, shred and serve with some guacamole, shredded cheese, salsa, shredded greens and taco shells. I skipped the shells and enjoyed it over a big salad…YUM!
Crockpot Chicken Tacos
2 skinless, boneless chicken breasts
1/2 cup black beans
jar of salsa
shredded organic cheddar
shredded greens (I used a kale/cabbage/brussels sprout mix)
guacamole (I used Wholey Guacamole)
Place the chicken in a single layer in the crockpot. Top with beans and 3/4 jar of salsa.Cover and cook on hight for 3 1/2 to 4 hours. When the chicken is cooked through, shred it with two forks. Serve the chicken with soft or hard taco shells, salsa, cheese, greens and guacamole and let everyone make their own tacos!
