Dark Chocolate Clusters

Dark Chocolate Clusters
1/2 C unsalted, roasted almonds (or any of your favorite nuts or seeds)
1/2 C salted roasted almonds
1/2 cup dried cherries (or any of your favorite dried fruit…get creative!)
7 ounces dark chocolate
Roughly chop the nuts and dried fruit and add them to a medium bowl.
In a separate bowl, melt the chocolate. (If you are using chocolate bars, first break them into small pieces). You can melt the chocolate in the microwave (cook 30-60 seconds at a time until fully melted) or over a double boiler.
Stir the chopped nuts and dried fruit Into the chocolate and mix until everything is fully coated in chocolate.
Spoon out heaping tablespoon-sized clusters of the chocolate mixture onto a baking sheet lined with waxed paper about 1-inch apart. Chill in the refrigerator to set for about 20 minutes. Serve at room temperature.
