Green Bean Walnut and Feta Salad

This is a delicious (and healthier) alternative to the traditional green bean casserole…

Green bean, Walnut and Feta salad

  • 1-½ lb. green beans –ends trimmed, cut in half

  • 1/4 Cup olive oil

  • 1/4 Cup fresh mint leaves packed

  • 2 Tablespoons white wine vinegar

  • 1/4 teaspoon Salt

  • 1/4 teaspoon minced garlic

  • pinch ground pepper

  • 1/4 Cup chopped toasted walnuts

  • 1 Cup diced red onion

  • 1/2 Cup crumbled feta cheese

Bring 4 qt. Water to boil in 6 qt. pot. Add beans and cook 4 minutes. Drain and submerge in ice water. Drain and pat dry (can prepare day ahead and store in towels)

Dressing- Combine mint, oil, vinegar, salt, garlic and pepper in food processor and blend.

When ready to serve: arrange beans in shallow white dish or glass bowel. Sprinkle with a layer of nuts, then onion, then cheese. Just before serving drizzle dressing over the salad (you may not need all of the dressing). Toss just before serving!
