Whole Wheat Goldfish Crackers
When it comes to snacking I’m always looking for healthy options that my kids will enjoy. They love fruits and vegetables, but sometimes want something else…like pretzels or chips or goldfish. But when you mom is a registered dietitian you rarely have these snacks in the house…until now. I just made my first batch of homemade wholewheat goldfish crackers and they were delicious (and so much healthier than the store-bought version).
I know making your own goldfish crackers may sound a bit crazy, but it was so simple (and the little fishy cutters are SO cute!). Simply combine cheddar, butter, whole wheat pastry flour, onion powder (for a bit of extra flavor) and a pinch of Kosher salt in the food processor. Chill the dough and it’s ready to go. Roll it out 1/8 inch thick…

Whole Wheat Goldfish Crackers
6 ounces (1 1/2 cups coarsely grated) organic sharp cheddar
4 tablespoons organic unsalted butter
¾ cup organic whole wheat pastry flour
1/8 teaspoon onion powder
pinch of Kosher salt
Preheat oven to 350°F.
Combine all ingredients in a food processor, running the machine until the dough comes together to form a ball.
Wrap the dough in parchment paper or plastic wrap and chill for 30 to 45 minutes.
On a lightly floured surface, roll the dough out 1/8-inch thick. Cut out shapes with a cookie cutter. Transfer crackers to a parchment-lined cookie sheet with a 1/2 inch between them. Bake the crackers on the middle rack for 10-12 minutes. Remove from the oven and set the cookie sheet on a rack to cool. Store in an airtight container and ENJOY!
