Cauliflower Crust Pizza
This is THE best (food) invention EVER! I was skeptical at first, pizza crust made out of cauliflower…really? YES! It is amazing….even the kids loved it. Start off by grating the cauliflower with a box grater (I tried grating it in a blender, but it did not come out fine enough).
Microwave the grated cauliflower for about 5 min and then mix in the cheese and egg and form into a crust on a parchment lined tray.
Bake for about 20-30 minutes until golden and voila…you have pizza crust. Top with sauce, cheese and your favorite pizza topping. Bake for another 15 minutes and enjoy (with a side of squash noodles!).
Cauliflower Crust Pizza
2 1/2 cups cauliflower, grated (about 1/2 a large head)
1 1/4 cups shredded part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
1 large egg, lightly beaten
Kosher salt and freshly ground black pepper
1/4 cup tomato sauce
Preheat oven to 425ºF.
Line a baking sheet with parchment paper.
Using a box grater, grate the cauliflower into fine crumbles. Place in a large bowl and microwave for about 5 minutes on high. Add in one cup of shredded mozzarella, parmesan cheese, egg and a pinch of salt and pepper. Mix well. Place on parchment lined baking sheet and pat into a 10-inch round. Bake for about 20-30 minutes, or until golden.
Top the crust with the sauce, 1/4 cup mozzarella, and your favorite pizza toppings (onions, mushrooms, artichokes, anchovies, etc!). Bake in the oven another 15 minutes until bubbly.
