Spiraled Sweet Potatoes

I love spiraling veggies. It makes them so much more fun to eat. One of my favs is the  Paderno Spiral Vegetable Cutter!  It’s amazing how changing the shape of a fruit or vegetable can turn it into a much more exciting dish.  My first creation…spiralized sweet potatoes.  I used the smallest bladed on my spiral slicer and turned one medium sweet potato into a delicious side dish for FOUR people!  The spiral cut potatoes were fun to look at (and play with!).  Cannot wait to try a different veggie tomorrow!

 

Spiralized Sweet Potato

1 large sweet potato

1 tablespoon olive oil

1/2 teaspoon cinnamon

pinch of sea salt

 

Preheat over to 400 degrees.

Spiralize the sweet potato using a small blade.  Place in a bowl and toss with olive oil, cinnamon and sea salt.  Place in a single layer on a baking sheet and bake for 20 minutes, tossing halfway through.
