Chocolate Chip Chickpea Blondies
These delicious blondies are so simple to whip up and made with super healthy ingredients. Now you can feel good about giving your family a treat! Who would have thought chickpeas and almond butter made such a yummy pair!
Chocolate Chip chickpea Blondies
2 boxes or cans (15 ounces) chickpeas, rinsed and drained
1 cup all natural almond butter
1/2 cup pure maple syrup
1 Tablespoon vanilla
1/2 tsp salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chocolate chips plus 2 tablespoons for sprinkling over the top!
Preheat oven to 350 degrees F and spray 8x8 inch pan with nonstick cooking spray (I also like to cut an 8 x 8 inch square of parchment paper to place on the bottom of the pan).
Add all ingredients except chocolate chips to a food processor (or blender) and process until smooth. Fold in 1/2 cup of chocolate chips. The batter will be thick (and so delicious!).
Spread batter into the pan evenly and sprinkle 2 tablespoons of chocolate chips on top. Bake for 30-40 minutes or until toothpick comes out clean and edges are a tiny bit brown. The batter may look underdone, but it will set as it cools and you definitely do not want dry blondies!
Cool in pan for 20 then cut into 25 squares and enjoy! They can be stored covered in the fridge for up to 3-5 days…but I don’t think they will last that long!
