Oatmeal Blueberry Banana Bread
When life give you over-ripe bananas…make this delicious Oatmeal Blueberry Banana Bread!
I am always looking for delicious and healthy recipes to make for a quick breakfast for my kids. This banana bread is perfect and SO simple to make.
Start by mixing the oats, almond flour (you can really sub in any kind of flour you like…oat, whole wheat pastry, buckwheat, etc), quinoa flour, coconut sugar, baking powder, baking soda, cinnamon and salt in a large bowl. In a separate bowl mash up your bananas and add in almond milk, avocado oil and vanilla and mix well.
Mix the wet ingredients into the dry ingredients and then fold in the blueberries.
Pour into a loaf pan and bake for about 50 minutes until golden…and enjoy!!
Oatmeal Blueberry Banana Bread
INGREDIENTS
1 1/4 cups old fashioned oats
1/2 cup almond flour (you can sub oat flour)
3/4 cup quinoa flour
1/4 cup coconut sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
generous pinch of salt
1 teaspoon cinnamon
3-4 ripe bananas, mashed
1/4 cup unsweetened almond milk
1 tablespoon avocado oil
1 teaspoon vanilla extract
1 cup (100g) fresh or frozen blueberries
INSTRUCTIONS
Preheat oven to 350 degrees F.
Grease a 9 x 5 loaf pan lightly with oil.
In a medium-sized mixing bowl, combine the flour, oats, sugar, baking powder, baking soda, cinnamon and pinch of salt.
In a separate bowl, mash the bananas by hand using the back of a fork. Add in the almond milk, oil and vanilla and mix well.
Add the wet ingredients to the dry ingredients and mix to combine, just until the flour is incorporated.
Gently fold in the blueberries.
Pour the batter into the loaf pan and bake for 50 – 55 minutes, until the top is golden and a toothpick placed in the center comes out clean.
Let cool for 15 minutes in the pan.
