Dark Chocolate Peanut Butter Snack Bars
I am always looking for fun, delicious and healthy snack ideas for my kids. These dark chocolate peanut butter bars are definitely fun, delicious and have a few healthy twists!
I made a few different versions until I found the right combination of creamy peanut butter flavor with a bit of crunchy texture and some healthy added ingredients. They were SO simple to make and the entire family LOVED them!
Start by mixing the dry ingredients in a medium bowl.
In a separate bowl mix the wet ingredients.
Combine the wet ingredients with the dry ingredients and mix until well incorporated.
Press the mixture into a parchment lined square pan and chill.
Dark Chocolate Peanut Butter Snack Bars
INGREDIENTS
1 1/4 cup almond flour
1/2 cup rice crisps cereal
1 tsp cinnamon
1/2 tsp salt
3/4 cup natural peanut butter (the runnier the better - my fav is Trader Joe’s)
1/4 cup maple syrup
1 tsp vanilla extract
2–3 tsp of almond milk
9 ounces of dark chocolate (my fav is HU gems)
1 tbsp coconut oil
INSTRUCTIONS
Mix the almond flour, rice crisps, cinnamon and salt together in a large bowl. In a separate bowl, mix the peanut butter, maple syrup and vanilla and then pour into the large bowl and mix until everything is combined. (If the mixture feels a bit dry, add 2-3 tsp of almond milk.)
Line an 8×8 inch pan with parchment paper, add the mixture to the pan, press down evenly and place the pan into the freezer.
While the pan is chilling, melt the chocolate and coconut oil together (I like to place both in a large glass bowl and microwave at 30 second intervals until it is completely melted and smooth.).
Take the pan out of the freezer and pour the melted chocolate on top. Place the pan in the refrigerator until set. ENJOY!
