Apple Crisp

FILLING:

  • 6-8 medium-large apples (half tart (like granny smith), half sweet (like honey crisp) (organic when possible)

  • 1 lemon, juiced

  • 1 1/2 teaspoon ground cinnamon

  • 1 Tablespoon arrowroot starch or cornstarch or oat-flour(for thickening)

  • 1 Tablespoon maple syrup

  • 1/4 cup of water

TOPPING

  • 1 cup rolled oats

  • 1/2 cup almond meal (or flour)

  • 1/4 cup coconut sugar (or brown sugar)

  • Pinch of salt

  • 1 teaspoon ground cinnamon

  • 1/3 cup melted coconut oil or olive oil

Preheat oven to 350 degrees F.

Core apples, cut them into 6-8 wedges and then into 1-2 inch chunks. Place the apples in a large mixing bowl and add all of the filling ingredients. Toss to combine. Add to a 9x9 (or similar size) baking dish and set aside.

The the same mixing bowl, add all topping ingredients. Stir to combine, then use fingers to break down any clumps. Pour over apples in an even layer.

Bake for 50 minutes to 1 hour (uncovered) or until the filling is bubbly, the apples are very fork tender (especially in the center of the dish), and the topping is deep golden brown. You may need to add a bit more water if the apples start to get dry.
